液面酵母 surface yeast， top yeast 亦称表面发酵酵母。酵母把糖发酵成酒精时所产生的二氧化碳附着于细胞，致浮在液面进行发酵，称此为液面酵母。是与液面下的下面酵母相对而言的。英国系统的啤酒（日本啤酒亦属此种）酵母、日本清酒酵母等皆属此例。
