Monitoring proteolysis is important in many areas ranging from digestibility studies in the food industry, to ensuring complete protein digestion prior to MS-analysis in proteomics, to the removal of tags from recombinant proteins. Other methods for monitoring proteolysis such as HPLC circular dichroism, mass spectrometry and SDS-PAGE are slow, may require expensive instrumentation, and are unsuitable for real-time monitoring.
