Aflatoxin M1
is the 4-hydroxy derivative of aflatoxin B1
(see
Fig. 1
). Aflatoxin M1
appears in milk and milk products as the direct result of the intake of aflatoxin B1
-contaminated feed by dairy cows (1
). The amount excreted as aflatoxin M1
, as a percentage of aflatoxin B1 in feed, is usually 1-4% (2
), but values as high as 6% have been reported at μg daily intake levels of aflatoxin B1
(3
). The carry-over of aflatoxin B1
to milk may vary largely from animal to animal, from day to day, and from one milking to the next.
