    来自黑(hēi)曲霉的葡萄糖氧化酶是由2个相等的亚基组成的二聚体,每个亚基的分子量为80kDa。每个亚基含有一个黄素腺嘌呤二核苷酸部分和一个铁。该酶是含有~16%中性糖和2%氨基糖的糖蛋白。该酶还含有3个半胱氨酸残基和 8个N-连接糖基化的潜在位点。
    葡萄糖氧化酶能够以不同的速率氧化D-己醛糖、单脱氧-D-葡萄糖和甲基-D-葡萄糖。
    葡萄糖氧化酶的最佳pH为5.5,虽然它的活性范围很宽,pH 4-7葡萄糖氧化酶对β-D-葡萄糖具有特异性,KM为33-110mM。
