Assay Principle
Sucrose synthetase (SS-II) catalyzes the reaction between free fructose and UDPG to produce sucrose. The generated sucrose then undergoes a color development reaction with resorcinol, producing a characteristic absorption peak at 480 nm wavelength. Enzyme activity is proportional to the absorbance value, enabling precise quantification of SS-II activity.
