甜菜花青苷betacyanin

　　 为红甜菜根的红色色素甜菜苷（ betanin， 5-O－β -D-吡喃葡糖甜菜苷）等，主要于中心子目（ Cen－ trospermae）植物（除石竹科）局部存在的红色植物色素之总称。与花色素、胡萝卜素不同，分子中含有氮元素。在这些植物中存在着结构相似的通称为甜菜花黄素（ betaxanthin）的黄色色素，已知的有 opuntia ficus－ indica、果实色素 indicaxanthin等。这两种色素群总称为 betalaino。 betalain的生物
