Zearalenone (6-[10-hydroxy-6-oxo-trans
-1-undecenyl]-β-resorcyclic acid lactone), also known as F-2 toxin, is an estrogenic mycotoxin that is produced by Fusarium graminearum

). This fungus can infect cereal grains and can elaborate large quantities of zearalenone. The mycotoxin can co-occur with
trichothecenes synthesized by Fusarium
sp. So far, at least 15 naturally produced derivatives of zearalenone including α-zearalenol, α-zearalanol, β-zearalenol,
and β-zearalanol have been identified.
