由于功能改变引起的形态和结构都发生变化的茎。茎变态是一种可以稳定遗传的变异。变态茎仍保留着茎所特有的特征：如有节和节间的区别，节上生叶和芽，或节上能开花结果。可分为地上变态茎和地下变态茎两大类。
