文献和实验一类重要的水溶性的植物色素，属于类黄酮。其基本结构是由一个吡喃酮和2个苯环组成，在B环上3＇、4＇、5＇的取代基不同，而使其种类众多。最普通的有3种（均以第一次得到它的植物命名）：在3＇、4＇上取代基是羟基者为矢车菊色素，亦称花青素（cyanidin）；在4＇上取代基是羟基者称天竺葵色素（pelargonidin）；3＇、4＇、5＇均为羟基取代的称花翠素（delphinidin）。在第三碳原子上的羟基最易糖基化形成花色素苷（anthocyanin）。在植物体中总是以花色
