In Vitro: Oleic acid is the most common monounsaturated fatty acids (FA) in human adipocytes and other tissues. Oleic acid prompts cell proliferation and migration in high metastatic cancer cells via enhancing β-oxidation mediated by AMPK activation. Oleic acid inhibits cancer cell growth and survival in low metastatic carcinoma cells, such as gastric carcinoma SGC7901 and breast carcinoma MCF-7 cell lines.

文献和实验油酸 oleic acid CH3 （ CH2 ）， CH=CH（ CH2 ） 7 COOH（顺式），为一种脂肪酸。分布极广，存在于动植物油脂中，在橄榄油、茶梅油、山茶油等油中特别多。为亚硝酸的作用下成为立体异构体的反油酸（ elaidic acid，反式），在动植物体内于氧的存在下可从硬脂酸合成油酸。
棕榈油酸 palmitoleic acid CH3 （ CH2 ） 5 CH=CH（ CH2 ） 7 COOH，顺式 -9-十六（碳）烯酸，动植物油脂中含量很少，大量存于海产油脂中。
亚油酸 linol（ e） ic acid CH3 （ CH2 ） 4 CH＝ CHCH2 CH=CH（ CH2 ） 7 COOH，脂肪酸的一种。为以甘油酯形态构成的亚麻仁油、棉籽油之类的干性油、半干性油的主要成分。占棉籽油、向日葵种子油、芝麻油的总脂肪酸的 40— 60％，占花生油、橄榄油的总脂肪酸的 25％左右。因为在空气中易氧化变硬，所以也称为干性酸，含干性酸多的油亦称为干性油.
