岩藻黄质 fucoxanthin 亦称褐藻素，为褐藻硅藻、金藻及黄绿藻所含有的色素，参与光合作用的光化学系统Ⅱ。分离时可能得到红褐色的结晶，它是叶黄质的一种，是使褐藻类呈现出褐色的物质，可以说是褐藻类所特有的色素，有时也散在地出现在硅藻类及其他藻类中。有时也同藻褐素（ phycophaein同样译为褐藻素）相混淆，但藻褐素（ phycophaein）认为是褐藻类所特有的水溶性色素，并且似乎是一种假想的物质似乎是指在植物体死后包含在褐藻类里的一种酚类物质被氧化后形成的黄褐色物质
非皂化脂质。是广泛地分布于动植物中的黄、橙、红或紫色的一组色素。构成发色原因的共轭二重键具有长链聚烯烃结构。通常是几种混在一起生成。具有C40 的萜结构的较多，不含氮。已知天然类胡萝卜素约有 300种，其中不含氧的碳化氢类有胡萝卜素、菌脂素等；含氧的非常多，有醇、酮、醚、醛、环氧化物、羰酸和酯等。它们之中大量存在的有岩藻黄质（ fucoxanthin）、叶黄素（ lutein）、堇菜黄质（ violaxanthin）、新黄质（ neoxanthin）等，均属于胡萝卜醇。类胡萝卜素多数
