又称抗癞皮病维生素或维生素PP。一种含烟酰胺或烟酸的B族维生素。烟酰胺(尼克酰胺)和烟酸(尼克酸)均为吡啶衍生物。维生素B5为无色晶体,较稳定,不被光和热破坏,对碱很稳定,溶于水及乙醇。在酵母、肝、瘦肉、牛乳、大豆中含量较多,米糠中含量丰富。维生素B5是生物体内辅酶Ⅰ和辅酶Ⅱ的主要成分,辅酶Ⅰ和辅酶Ⅱ都是某些脱氢酶的辅酶,为生物氧化过程中不可缺少的递氢体。膳食中长期缺少维生素B5可引起对称性皮炎,又叫癞皮病或糙皮病。患者中枢及交感神经系统、皮肤、胃、肠等均受不良影响。主要症状为两手
