可从蝲蛄科的蝲蛄 Astacus分离出的紫色针状结晶的类胡萝卜素( R. Kunn)是以其烯醇型的虾青素( astaxanthine)与蛋白质的结合物(蓝绿色)的形态广泛存在于甲壳类壳内,此外,作为一种酯类的形态也存在于某些鱼皮中。虾、蟹的壳,在生活时呈蓝绿色,加热或用酸处理后变成红色,原因是此色素蛋白质发生分解,游离出虾青素再经氧化变为红色的虾红素的缘故。作为游离色素存在于鲑类( Salmo iri-deus)的卵内,具有促使虹鳟精子运动活泼化的类似受精物质的作用
粘质沙雷氏菌( Serratia marce-scens)产生的红色色素。不溶于水,可溶于氯仿和乙醚。这种细菌在受潮的面包上繁殖,即产生此色素,故使面包成为血红般的颜色。因而中世纪的人们把出现这种“圣餐式”的面包现象,看作是基督的显身。
