海藻酸(褐藻胶, 海藻酸盐) 是一种多糖，在褐藻细胞壁(囊褐藻纲，海带目和墨角藻目) 和特定细菌 (乙酰化形式)中含量丰富。化学结构上，它是一种线性共聚物，由(1-4)链接的 β-D-甘露糖醛酸 (M)和C-5位差向异构体α-L-古罗糖醛酸 (G)残基均聚嵌段在不同的序列或嵌段共价连接在一起。
单体可以以下均聚嵌段形式表示，连续的 G-残基(G-嵌段)，连续的M-残基(M-嵌段)，交替的M和G-残基 (MG-嵌段) 或随机组合的嵌段。
