Assay Principle
In this kit, S-AI catalyzes the degradation of sucrose to generate reducing sugars (glucose and fructose). Under alkaline conditions, the reducing sugars react with 3,5-dinitrosalicylic acid (DNS) to produce a brown-red colored compound, which has a characteristic absorption peak at 510 nm. Within a certain range, the rate of change in absorbance at 510 nm over time is directly proportional to S-AI activity.
