Lysozyme can hydrolyze the β (1 → 4) linkage between N-acetyl muramic acid and N-acetyl-D-glucosamine residues in peptidoglycan, as well as between N-acetyl-D-glucosamine residues in chitosan< Gram positive cells are highly sensitive to this hydrolysis because of the high proportion of peptidoglycans in their cell walls< Gram negative bacteria are less sensitive to this hydrolysis because they have an outer membrane and a lower proportion of peptidoglycan< However, these cells may hydrolyze in the presence of EDTA that chelates metal ions in the outer membrane< br/>
