Parakinose is a disaccharide that exists between D-glucose and D-fructose α The (1 → 6) bond is similar to sucrose and has its own physicochemical properties. It is converted from sucrose in certain bacteria through the action of sucrose isomerase. In the gut of mammals, the hydrolysis and absorption of paraginose are much slower than sucrose.
