存在于节肢动物和软体动物的外壳及其菌和细菌的细胞壁物质中的一种粘多糖。结构为β -聚 -N-乙酰葡糖胺。纯制剂为白色粉末，不溶于水、有机溶剂、弱酸、弱碱，但可溶于浓盐酸、硝酸和硫酸。在强碱作用下分解成脱乙酰几丁质和乙酸，脱乙酰几丁质进一步在浓盐酸的作用下则水解成葡糖胺和乙酸。
