文献和实验延胡索酸 fumaric acid 为乙烯的反式二羧酸 [反丁稀二酸 ]。它的顺式为马来酸（顺丁烯二酸）。它除以钾盐的形态广泛存在于植物 界（例如 Fumaria officinalis）外，还可通过微生物发酵生成（延胡索酸发酵）。在好氧代谢中，它作为三羧酸循环的一环起重要作用，琥珀酸如为琥珀酸脱氨酶所氧化，便生成延胡索酸。后者在延胡索酸的作用下，加一分子 H2O，就形成苹果酸。这些酶促反应是可逆的，在大多数细胞和组织的呼吸途径中，占有重要的位置。
