    • 类胡萝卜素 carotenoid

      非皂化脂质。是广泛地分布于动植物中的黄、橙、红或紫色的一组色素。构成发色原因的共轭二重键具有长链聚烯烃结构。通常是几种混在一起生成。具有C40 的萜结构的较多，不含氮。已知天然类胡萝卜素约有 300种，其中不含氧的碳化氢类有胡萝卜素、菌脂素等；含氧的非常多，有醇、酮、醚、醛、环氧化物、羰酸和酯等。它们之中大量存在的有岩藻黄质（ fucoxanthin）、叶黄素（ lutein）、堇菜黄质（ violaxanthin）、新黄质（ neoxanthin）等，均属于胡萝卜醇。类胡萝卜素多数

      　　指在黄载色体和红载色体中含有类胡萝卜素的球状小泡。和蝶呤体（ pterinosome）一起与出现黄色、橙色和红色有关。直径多在 0.1微米左右，但也有在 1微米以上的。所含有的类胡萝卜素系来源于食物。
