文献和实验非皂化脂质。是广泛地分布于动植物中的黄、橙、红或紫色的一组色素。构成发色原因的共轭二重键具有长链聚烯烃结构。通常是几种混在一起生成。具有C40 的萜结构的较多,不含氮。已知天然类胡萝卜素约有 300种,其中不含氧的碳化氢类有胡萝卜素、菌脂素等;含氧的非常多,有醇、酮、醚、醛、环氧化物、羰酸和酯等。它们之中大量存在的有岩藻黄质( fucoxanthin)、叶黄素( lutein)、堇菜黄质( violaxanthin)、新黄质( neoxanthin)等,均属于胡萝卜醇。类胡萝卜素多数
指在黄载色体和红载色体中含有类胡萝卜素的球状小泡。和蝶呤体( pterinosome)一起与出现黄色、橙色和红色有关。直径多在 0.1微米左右,但也有在 1微米以上的。所含有的类胡萝卜素系来源于食物。
