Galactan is a polysaccharide abundantly present in various plant sources, including seaweeds, fungi, and bacteria. This naturally occurring compound finds its applications in both industrial and medical fields. Notably, galactan stands out due to its remarkable solubility in water, low viscosity, and extensive branching. Extensive research has been conducted to explore galactan′s potential as an anti-inflammatory agent, emulsifier, and adjuvant in vaccine formulations. Regarding its anti-inflammatory properties, galactan has undergone comprehensive investigations that demonstrate its ability to mitigate inflammation in animals. This has led to its exploration as a potential treatment for inflammatory conditions, such as rheumatoid arthritis. Additionally, galactan has garnered attention for its emulsifying properties, showcasing its capacity to stabilize emulsions and enhance the shelf life of food products. Furthermore, galactan has been extensively studied as an adjuvant in vaccine formulations. Its inclusion in vaccines has shown promise in augmenting vaccine efficacy while reducing the required antigen dosage. 文献和实验水解几乎或完全生成半乳糖的多糖的总称。羽扁豆种子果胶中的半乳聚糖是由约 100个 D-半乳糖以β -1， 4键结合所成的。从红藻细胞壁得到的琼脂半乳聚糖，其 D-半乳糖以 1， 3键结合，其一部分羟基硫酸酯化， 1— 2％水溶液具有可在 50℃时凝胶化，和在 90— 100℃时溶解的特性。蜗牛的卵和蛋白腺的半乳聚糖，是 D-半乳糖和 L-半乳糖以 6∶ 1的比例缩合成胶体状粘液，因为与糖原类似，所以亦称半乳糖原，含 L-构型的糖是其特点。
阿拉伯糖与半乳糖组成的中性多糖。在针叶树的木质部中大量含有此糖，特别在落叶松（Larix）中可达25% 。可用水从木粉中提取。L-阿拉伯糖与D-半乳糖的含量比一般为1∶5—6。为具有很多分支的结构，在β-1，3或β-1，6-键的半乳糖链中接有β-1，3-键的阿拉伯糖侧链。
构成细胞壁中胶层的物质，大量含于初生壁中，次生壁中一般较少。主要成分为半乳糖醛酸高度脱水缩合而成的多糖。分子量以及甲酯化或乙酰化的程度、二价阳离子（Ca2 、 Mg2 ）含量是不一样的。可用热水、热草酸铵溶液抽提，但多伴有阿拉伯聚糖、半乳聚糖或鼠李糖等中性糖成分。此外细胞壁中果胶质相互重组，对果实成熟上起重要作用，果实生长早期仅原果胶、果胶酸盐有所积累，随着成熟，前者变为可溶性果胶，而果胶酸盐则消失，致使果变软。基于其可形成凝胶的性质，被应用于果酱、胨胶的制造上。
