EGF 是一类重要的生长因子，是类 EGF 大家族的一个成员。它是
由 50-60 个氨基酸分子组成的肽链，链中含有 6 个半胱氨酸分子，半胱
氨分子间形成稳定的双硫键。EGF 通过与细胞表面的受体表皮生长因子
受体(EGFR)结合而起作用。与 EGFR 的高亲和力结合，激发受体内在的
酪氨酸激酶的活性，从而启动了信号传导级联而导致多种生物化学变
化，细胞内钙水平上升，增加糖酵解与蛋白质合成,增加某些基因(包括
表皮生长因子受体)的表达，最终导致 DNA 合成和细胞增殖。人体 EGF
是由 53 个氨基酸残基组成的单链多肽，多肽中没有丙氨酸、苯丙氨酸
和赖氨酸。它有三个二硫键，这些二硫键是它具有生物活性所必需的，
如加入琉基试剂和尿素，则 EGF 失活，肽链上的巯基可在空气中自然
氧化而完全恢复活性。
