文献和实验指只含 1个多羟基酮或醛单位的、最简单的糖,不能再被水解为更小的糖单位。根据羰基的特点,可将单糖分为醛糖和酮糖两类。又根据其所含碳原子的数目分别叫做丙醛糖、丙酮糖(含 3个碳)、戊醛糖(含 5个碳)、己醛糖、己酮糖(含 6个碳)等。除二羟基丙酮(丙酮糖) 外,所有单糖分子都含有手征性碳原子,即连接着 4个不同的原子或原子团的碳原子。因此单糖都有光学活性异构体。丙醛糖有 1个手征性碳原子,因而有 2种立体异构体。己醛糖有 4个手征性
只含一个有羰基的多羟基化合物单位的最简单的糖。 分类 单糖根据其羰基所在位置分为2类。羰基在分子末端的为醛糖;羰基在其他位置的称酮糖。又可根据所含碳原子的数目分为丙糖、丁糖、戊糖、己糖和庚糖。 结构 几乎全部天然存在的单糖都没有支链,其每个碳原子连接一个羟基或一个衍生的功能基。单糖至少含有一个手性(不对称)碳原子,只有二羟基丙酮例外;所以一般单糖皆有旋光活性,其立体异构体数目为2n ,n为手性碳原子的数目。单糖的构型以前缀D-或L-表示。D
