文献和实验细胞内酶的对应词。它是从细胞中以分泌液的状态（或其它）放出到细胞外，而在细胞外发挥催化作用的酶。消化液中的酶就是其中的一例。关于微生物的水解酶，可在其培养液中检查到的，多称为细胞外酶（菌体外酶）而只在菌体内能证明的酶多称为胞内酶（菌体内酶）。不过在这种情况下，有可能误将原来是属于胞内酶的，只因培养过程中，中途死细胞分解放到培养基中的酶当作胞外酶。
S－腺苷甲硫氨酸 S－ adenosylmethionine 亦称活性甲硫氨酸，在生物体内由 ATP与甲硫氨酸在甲硫氨酸活化酶的作用下合成。甲硫键是高能键，另外其丙基胺部分也加入到多胺化合物中。当胆碱、肌酸及其它甲基化合物生成时它作为甲基供体而起作用。认为甲硫氨酸的分解也经过此物质。
