柠檬酸发酵 citric-acid fermentation
属于氧化发酵形式之一,即从糖经过氧化而产生柠檬酸。最有名的生产菌是黑曲霉。其生产方法有以淀粉渣作基质的固体培养法和以糖液为基质的液体培养法。后者是根据环境条件所采用的适宜方法,如使用浅盘或转筒的表面培养法;依靠通气搅拌的深层培养法等。目前采用深层培养法进行生产的较多。关于柠檬酸的生成机制,一般认为由糖质产生的丙酮酸一部分,变成乙酰辅酶 A和另一部分与二氧化碳结合成草酰乙酸之后,通过柠檬酸合酶( synthase)的作用而生成柠檬酸。
无色结晶,作为柠檬酸循环之一在好氧代谢中起着重要的作用。广泛分布于生物界,此外作为细菌、霉菌的发酵生成物而大量产生。是Ca离子的捕获剂,其钠盐( sodium citrate)可用作血液的抗凝剂。在柠檬、桔子等有酸味的果实中以游离状态存在。在线粒体膜上有柠檬酸的运输系统。柠檬酸还对磷酸果糖激酶作为效应物而起抑制作用。
