Potassium ascorbate is the potassium salt of ascorbic acid. Ascorbic acid is a sugar with anti-oxidant properties, that occurs naturally in most fruits and vegetables, commonly known as vitamin C. Commercially it is synthesised by the bacterial fermentation of glucose, then followed by chemical oxidation with potassium. This produces a white to yellow powder that is soluble in water, and used as an anti-oxidant, and preservative in foods.
