乙酰胆碱 acetylcholine 系胆碱的乙酰酯、潮解性强的碱性物质。在植物大量地含于麦角中。在动物由于刺激可从副交感神经或运动神经的末梢游离出来，在神经突触和终板上为兴奋传导物质（化学传导物质）。结果呈现血压降低、心跳抑制、肠道收缩、骨骼肌收缩等生理作用。在生物体内由胆碱和乙酰 CoA经胆碱乙酞化酶作用而合成。另外，可被胆碱酯酶水解成胆碱和乙酸。
