5.用铁管将枣核挖出。 6.把熟富强粉与刺肉拌和,使每个枣都沾上一层面粉,筛去多余的面粉。 7.把刺肉再摊在席或屉上,厚3~4厘米,在阳光下曝晒3~4天;或是摊放在屉上放入烘干室,在60℃室温中烘10~12小时。用手稍加用力可将枣肉捏扁即可。 8.将刺肉逐个捏成扁平的长圆形,即是永城枣干。保存时要注意防潮。 产品特点 枣肉细腻,清香甘美,很受群众欢迎。
牡蛎的加工方法很多,如晒牡蛎干、盐渍、制罐及提炼蚝油等,壳可煅烧成贝壳石灰。 制作方法(鲜干) 1.把鲜蛎肉平铺在竹箔上进行曝晒或烘干而成。初晒时每隔1~2小时翻动一次,以免粘贴在竹箔上,一天后稍干便可用竹片在蛎肉闭壳肌前方穿孔,用绳一圈或一排地串起来,每圈(排)约20~30个蛎肉,再晒3~5天,便成鲜晒蛎干。 2.鲜晒蛎干必须在日烈风干的冬季进行。春节过后,空气湿度不易晒干,即使晒干质量也欠佳。 3.晒干:将滴去水分后的熟蛎肉分散铺在竹帘上晒,并及时摘除
制作方法 1.原料选择:选肉质柔软细致、石细胞少,含糖量高、香气浓和果心小的品种,如巴梨、茌梨、茄梨等,剔除烂果与过熟果。 2.削皮:梨的外皮较粗糙,须去皮,可用人工和机械方法将果梗和萼片切除。 3.切分:用不锈钢水果刀切成块状或圆片,也可以切成两半或4~5块。 4.浸盐水:为防止切分后的果实氧化变色,可用1~2%的食盐水浸泡或喷酒护色。 5.熏硫:将梨片送入熏硫室。每吨果实用硫磺2~3公斤,熏硫时间依果实切分方法和厚薄而异
