| 检测原理 |
蔗糖酶作用于其底物（蔗糖）生成葡萄糖，葡萄糖在其葡萄氧化酶的作用下产生过氧化氢，过氧化氢同显色剂反应产生红色产物，在505 nm波长处有强烈吸收峰。在一定浓度范围内，其吸光度与葡萄糖浓度呈线性关系。因此，通过测定505 nm处吸光度，可计算葡萄糖生成量，进而计算出蔗糖酶活力。
