抗坏血酸过氧化物酶（APX）催化抗坏血酸（ASA）与过氧化氢（H2O2）反应，使ASA氧化成单脱氢抗坏血酸（MDASA）。随着ASA被氧化，溶液中290nm波长下吸光度值（A290）下降，根据单位时间内A290减少值，计算抗坏血酸过氧化物酶（APX）活性。ASA氧化量按消光系数2.8 mL/（μmol·cm）计算。
