文献和实验构成细菌的鞭毛纤维的粒状蛋白质。其分子量可因菌种而异,肠细菌群的是 5-6万,而芽孢杆菌属据报道为 3万左右。这种蛋白质的氨基酸组成也因菌种而异,但都含有多量的天冬氨酸、苏氨酸、谷氨酸,而不含半胱氨酸和色氨酸。在沙门氏菌的一些种中,鞭毛蛋白所含赖氨酸,约有半数在ε位被甲基化。鞭毛纤维是通过鞭毛蛋白分子卷成圆筒状聚合而成。聚合反应是通过疏水键进行的,此时分子的形态发生了变化。而且由于形态发生改变的分子只在分子的一端与另一分子形成键,所以纤维只朝一个方向延长。用强酸
