D-Fructose and D-glucose are found in most plant products. In foods, they are present in significant quantities in honey, wine and beer, and a range of solid foodstuffs such as bread and pastries, chocolate and candies. In the wine industry, the D-fructose and D-glucose content is one of the most important parameters and is monitored at each stage of the wine making process. The specific aim of the current assay format is to provide a simple, rugged, reliable and accurate method for the measurement of D-fructose plus D-glucose employing an inexpensive colorimeter (the MegaQuantTM Meter).
