由肝细胞生成的一种液体。生成后由肝管排出，经总胆管流入十二指肠，在非消化期间，胆汁由肝管流入胆囊而贮存，当消化时再由胆囊排出经总胆管而流至十二指肠。胆汁为一种较浓的、具苦味的有色汁液，正常人24小时内分泌量为300～700毫升。从肝脏初期分泌的胆汁称肝胆汁，呈金黄色或黄褐色，固体物含量较少，比重接近1.009，弱碱性（pH7.4）。肝胆汁进入胆囊后，其中水、盐和其他一些成分不断被胆囊吸收，从而使胆汁浓缩，成胆囊胆汁，比重约1.032左右，并由于碳酸氢盐重新被吸收而呈弱酸
